
BAROSSA VALLEY CABERNET MALBEC
2021
THIS RICH, BRIGHT, COMPLEX WINE HAS FLAVOURS OF BLACKCURRANT AND POMEGRANATE, VIOLETS AND WILD HERBS. THE PALATE IS SMOOTH AND TEXTURAL, WITH A FINE TANNIN BACKBONE AND A LINGERING FINISH.
Cabernet Sauvignon and Malbec were sourced from the Kurtz Vineyard at Light Pass, at the foot of the Barossa’s eastern slopes. The vines are cooled by afternoon gully breezes that temper the summer heat, helping retain purity of fruit, elegance and balance.
The two varieties were co-fermented to create a uniquely Australian red made with time-honoured techniques in a fresh, modern style. An uncomplicated winemaking approach with minimal intervention, has allowed the fruit to shine and show the best of both varieties.

WINEMAKING:
Cabernet Sauvignon and Malbec grapes were co- fermented in a small concrete open fermenter. Gentle handling during fermentation on skins has allowed for optimum extraction of flavour and a fine, long, balanced tannin structure. The wine was matured in seasoned, spicy French oak for 17 months to soften and develop richness and complexity without picking up dominant oak flavour.

PEAK DRINKING:
This bright, lively wine features plenty of plush fruit and a smooth, supple palate on release. However, if you prefer a little more age to your wines, with careful short to medium-term cellaring it will develop further subtle complexity.
FOOD MATCH:
Great with slow roasted shoulder of saltbush lamb with rosemary and mint sauce, chargrilled merguez sausages, or beetroot and red onion tarte tatin.

PALATE:
Red by Caroline Dunn Cabernet Malbec is a wine of grace, elegance and fruit purity. The blend lends a delightful synergy that brings out the best of each variety. The palate is supple, smooth and textural, with a fine tannin backbone giving great structure and presence, and a lingering dark fruit finish.
